Находясь в сухом (в пониженном, неправильном для данного типа продуктов) уровне влажности вода из продукта испаряется, если наоборот высокая влажность, то продукт впитывает себя в воду как губка. Это очень сильно мешает переработке продуктов, а так же воздействует на вкусовые качества.
